Ibiza restaurants fall into a few distinct types and they ask for different things from the person sitting opposite you. A beach table at Es Torrent or Sa Punta is long, loud and sun-worn, and the conversation runs across the whole table. Casa Maca or La Paloma up in the hills is quieter, slower and a little bohemian. Zela, Nobu or Cipriani in and around the port are dressed-up rooms where everyone is looking at everyone.

Es Torrent is down a long track on the south coast. Cala Bonita sits above Santa Eulària. Es Boldadó looks out at Es Vedrà from above Cala d'Hort and the last stretch of road is not one you want to meet in the dark for the first time. None of these are ten minutes from anywhere.

Reckon on the transfer at both ends when you set the hours. A three-hour booking with a 40-minute drive each way is really an hour and a half at the table, which is not a dinner. Either extend the booking or pick somewhere closer — Ibiza Town, Talamanca and Cala Jondal all have serious kitchens within a short hop.

If you are driving yourself, agree where she is picked up and dropped. If not, book a car. Taxis in August do not appear outside restaurants at half past midnight.

Four things are enough. Where the table is, what time it is booked for, whether the evening is just the two of you or a group, and what language the table will run in. That last one catches people out — a dinner in Ibiza can switch between Spanish, Italian and English before the starters land.

Most dinner bookings do not end at dinner, and the shape of what follows depends on where you ate. From the port you can walk up into Dalt Vila or drop into a bar behind the marina. From the south coast you are ten minutes from the Playa d'en Bossa strip if the night is going that way.

Add the hours at the booking stage rather than at eleven o'clock. A dinner that turns into a club is an eight-hour night, not a four-hour one, and the nightlife side is a different kind of booking with a different plan for getting home. For a slow evening that goes back to a villa instead, the luxury tier is the better place to look.
